Spinach Artichoke Dip

Diving right into the new year with the creamiest dip of them all… dairy-free Spinach Artichoke Dip šŸ¤¤ Our Pure Coconut june adds the perfect tang thatā€™ll have you coming back for seconds (and thirds and fourths šŸ‘€). Make this dreamy side for your next potluck or even save it for Super Bowl Sunday, the possibilities are endless!

WHAT YOU’LL NEED FOR THE SPINACH ARTICHOKE DIP

  • 4 heaping cups spinach 
  • 1 can artichoke 
  • 2 tbsp minced garlic 
  • 1 yellow onion minced 
  • 1 tbsp olive oil
  • 1 Ā½ cup Pure Coconut cocojune 
  • 1 cup vegan cream cheese 
  • 3 tbsp garlic powder 
  • 2 tsp salt 
  • Juice of half a lemon 
  • Ā¼ cup of each dill, parsley and chives, minced 

STEPS TO DELICIOUSNESS

  1. Preheat your oven to 400F.
  2. In a large skillet, saute onions and garlic in olive oil on medium heat until translucent and fragrant.
  3. Add spinach to the pan and sautee for an additional 5-8 minutes. 
  4. In a large bowl, add the cooked spinach mixture along with the remaining ingredients and give it a good ole mix.
  5. Transfer this mixture to a 9×13 baking dish. 
  6. Turn on some jams, dance, and bake this dreamy dip for 25-30 min!
  7. Slice up some bread, veggies, or whatever your heart desires and diveeee in!
