WHAT YOU’LL NEED
Flax Egg
- ÂŒ cup ground flaxseedsÂ
- œ cup water
Yogurt Milk Mixture
- 1 cup cocojune Strawberry Unsweetened yogurtÂ
- 2 Âœ cups of plant milkÂ
- 2 tbsp ACV
Waffle Ingredients
- 3 Âœ cups AP flourÂ
- 2 tbsp baking powderÂ
- 1 tsp saltÂ
- Âœ cup granulated sugarÂ
- Âœ cups melted plant butterÂ
- 3 tsp vanilla extract
STEPS TO DELICIOUSNESS
- Mix flax and water in a small bowl. Set aside for about 5 minutes to thicken.
- Mix ingredients for yogurt milk mixture in a medium bowl. Set asideÂ
- Combine flour, baking powder, salt and sugar in a medium bowl. Pour in flax egg, yogurt milk mixture, melted butter and vanilla extract. Whisk until well combined. Should be thick but still smooth and slightly runny.Â
- Heat up your waffle iron with butter. Pour in batter, wait until waffles are deep golden brown on both sides and edges are slightly crisp.Â
- Top with heaping dollops of cocojune Strawberry Unsweetened yogurt, strawberry compote and dusting of matcha! Enjoy!
