Strawberry Matcha Waffles

We’ve whipped up this dreamily delicious stack of waffles topped with homemade strawberry compote, probiotic-packed Strawberry Unsweetened cocojune, and a dusting of vibrant matcha to create this perfect brekkie! Plus, this recipe is 100% dairy-free and sure to please allll your breakfast needs šŸ§‡šŸ“šŸµ

WHAT YOU’LL NEED

Flax Egg

  • ¼ cup ground flaxseedsĀ 
  • ½ cup water

Yogurt Milk Mixture

  • 1 cup cocojune Strawberry Unsweetened yogurtĀ 
  • 2 ½ cups of plant milkĀ 
  • 2 tbsp ACV

Waffle Ingredients

  • 3 ½ cups AP flourĀ 
  • 2 tbsp baking powderĀ 
  • 1 tsp saltĀ 
  • ½ cup granulated sugarĀ 
  • ½ cups melted plant butterĀ 
  • 3 tsp vanilla extract

STEPS TO DELICIOUSNESS

  1. Mix flax and water in a small bowl. Set aside for about 5 minutes to thicken.
  2. Mix ingredients for yogurt milk mixture in a medium bowl. Set asideĀ 
  3. Combine flour, baking powder, salt and sugar in a medium bowl. Pour in flax egg, yogurt milk mixture, melted butter and vanilla extract. Whisk until well combined. Should be thick but still smooth and slightly runny.Ā 
  4. Heat up your waffle iron with butter. Pour in batter, wait until waffles are deep golden brown on both sides and edges are slightly crisp.Ā 
  5. Top with heaping dollops of cocojune Strawberry Unsweetened yogurt, strawberry compote and dusting of matcha! Enjoy!
