Dairy-Free Strawberry Glaze

No need for an extravagant icing recipe when you can use cocojune as your glaze any day of the week! This super simple strawberry glaze recipe is sweet and dreamy. Make sure to tag us @cocojune_organic in all your dessert creations so we can see the glaze in action 🙂

WHAT YOU’LL NEED

1 tbsp + 1 tsp cocojune Strawberry Unsweetened yogurt
1 cup powdered sugar
Pinch of beetroot powder

STEPS TO STRAWBERRY DELICIOUSNESS

1. Mix powdered sugar, Strawberry Unsweetened yogurt, and beetroot powder into a bowl until combined.

2. Add more yogurt or a dash of dairy-free milk to get the desired consistency.

3. Glaze to your hearts desire!

Holiday parties are in full swing and our friend @healthyeatsbyfi is bringing dairy-free june to the table in every dish (just how we like it!) 😉 See all the dreamy deets below ⬇️⬇️⬇️
1. Tiramisu dessert cups - mix together 1 cup of Vanilla Unsweetened cocojune, 2 tbs maple syrup, and a splash of vanilla extract. brew a double shot of espresso and dip cookies of choice in the coffee (you can use ladyfingers or graham crackers here). add layers of soaked cookies and yogurt then top the final layer off with a dusting of cocoa powder and shaved dark chocolate. place in the refrigerator for 1-2 hours.
2. Crispy smashed potatoes with garlic dip - prep and wash baby potatoes then par boil until fork tender. smash on a baking tray using the back of a glass. drizzle with olive oil and season with salt and pepper. air fry for 15-20 minutes at 400 degrees fahrenheit. while in the air fryer, make the garlic dip by combining 1/3 cup Pure Coconut cocojune, 2 garlic cloves, 3 tbs olive oil, salt, and pepper in a food processor. top everything off with chopped dill.
3. Creamy tomato pasta - combine your pasta sauce and cooked pasta then season well (i seasoned with salt and black pepper). finish off with dollops of Pure Coconut cocojune, chili flakes, fresh basil, and herby olive oil.

You won’t wanna be tartaaay for this ✨Dessert Series✨ partayyy 🥳 We’re heating things up with a dreamy cranberry apple tart 🍎😍 It’s a breeze to bake but a total showstopper to bring along to any holiday hang.

What You’ll Need
✨4-5 apples, halved then thinly sliced into half moons
✨ 4 cups fresh or frozen organic cranberries
✨ ½ cup organic cane sugar
✨ ½ cup water
✨ ½ cup orange juice
✨ 4oz cocojune Pure Coconut
✨ Cinnamon and turbinado sugar for topping
✨ Your favorite vegan puff pastry or pie crust
✨ 2 tbsp vegan milk for egg wash replacement
✨Optional: raspberries, blueberries, strawberries and/or orange zest for cranberry sauce

How to Make
1. Heat your oven to 375F.

2. Add the water, orange juice and sugar to a medium saucepan over medium heat. Allow the sugar to fully dissolve, then add in your cranberries.

3. Cook this for about 10-15 minutes until the cranberries are soft and start to pop. If you’re using other fruit, add it in. Transfer the mixture to a bowl to cool. We suggest making this the night before you can also pop it in the fridge for about 30 minutes to an hour 🙂

4. Roll out your favorite vegan puff pastry or pie dough onto your tart pan.

5. Evenly spread about ½ a cup of cranberry sauce onto the puff pastry/pie crust. Arrange your apples and then sprinkle with turbinado sugar. Brush the edges with vegan milk and then bake for about 20 minutes or until edges are golden brown 😍

6. Allow everything to fully cool and then top with cinnamon, cocojune Pure Coconut, lemon or orange zest and any fruit you’re feeling 💕

Holiday szn is in fullll swing over here at june HQ and we’re starting off our ✨Holiday Dessert Series ✨ with the dreamiest selection of cookies featuring our gal pal Pure Coconut… a classic!! What’s your favorite holiday dessert? Comment below, we wanna know 😍

What You’ll Need
2 ¼ cups all purpose flour
⅓ cup granulated sugar
¼ cup ground almonds
5 oz vegan butter, cubed
2 tbsp soy milk
2 tbsp cocojune pure coconut
Jam, melted chocolate, or sprinkles for decorating

How to Make
1) Preheat your oven to 350F.

2) Combine all dry ingredients and then rub in the cubed vegan butter with your hands. The mix should look slightly like wet sand, crumbly but moist 🧐

3) Next add in plant based milk and cocojune pure coconut.

4) Knead everything into a smooth dough. It should go from crumbly to smooth rather quickly 🏃‍♀️

5)Flour your work surface and roll out the dough to ⅛ inch thick.

6) Use your favorite holiday cookie cutters to stamp out cookies.

7) Bake these cuties for 10-12 minutes.

8) Let them cool, decorate with melted chocolate, sprinkles or jam and enjoy!
