Blue Magic Pancakes

Blue Magic is having its MOMENT this summer ✨

This decadent stack of pancakes is loaded to the brim with blueberries and alll the Blue Magic goodness! cocojune is used in lieu of buttermilk in these fluffy pancakes. Then the stack is jeweled with more blueberries, before being topped with a gratuitous dollop of blueberry compote and a hefty spoonful of Blue Magic 🫐 🪄

WHAT YOU’LL NEED FOR THE BLUE MAGIC PANCAKES

  • ½ cup + 2 tbsp fresh or frozen blueberries 
  • 1 tbs melted butter or plant-based butter, plus more for frying
  • 1 large egg or flax egg
  • 1 container cocojune Blue Magic, divided 
  • ½ teaspoon vanilla extract 
  • ¼ cup water
  • 1 cup gluten free pancake mix 

WHAT YOU’LL NEED FOR THE COMPOTE

  • 1/2 cup + 2 tbsp fresh of frozen blueberries
  • Zest of 1 lemon 
  • ½ tsp cardamom
  • 2 tbs maple syrup, plus more to serve 

STEPS TO DELICIOUSNESS

  1. In a medium bowl, add melted butter, the egg, and 3oz of Blue Magic. Stir to combine
  2. Add vanilla extract and water to the mixture and stir.
  3. Add the wet ingredients to the cup of pancake mix and stir until no lumps remain.
  4. Heat a pan over medium heat, when the pan is hot add some butter and ladle in ¼ cup of batter.
  5. Cook for 2 minutes, or until the bottom is golden brown and bubbles are beginning to appear on the surface. Flip and cook for another minute or 2 on the other side. Repeat with the remaining batter. 

For the Compote

  1. Add 1 cup of blueberries to a small saucepan set over medium low heat. Cover with a lid.
  2. The blueberries will release a pool liquid as they heat – once they have, remove the lid and allow them to slowly simmer until the liquid has evaporated and the blueberries are thick and jammy.
  3. Remove from the heat and stir in the lemon zest, cardamom and maple syrup.
  4. Top pancakes with compote and some more Blue Magic, of course! Enjoy 🙂
