Strawberry Matcha Waffles

Talk about an UNREAL plant-based brekkie stack 😍

We’ve whipped up this dreamily delicious stack of waffles topped with homemade strawberry compote, probiotic-packed Strawberry Unsweetened cocojune, and a dusting of vibrant matcha to create this perfect brekkie! Plus, this recipe is 100% dairy-free and sure to please allll your breakfast needs 🧇🍓🍵

WHAT YOU’LL NEED

Flax Egg

  • ¼ cup ground flaxseeds 
  • ½ cup water

Yogurt Milk Mixture

  • 1 cup cocojune Strawberry Unsweetened yogurt 
  • 2 ½ cups of plant milk 
  • 2 tbsp ACV

Waffle Ingredients

  • 3 ½ cups AP flour 
  • 2 tbsp baking powder 
  • 1 tsp salt 
  • ½ cup granulated sugar 
  • ½ cups melted plant butter 
  • 3 tsp vanilla extract

STEPS TO DELICIOUSNESS

  1. Mix flax and water in a small bowl. Set aside for about 5 minutes to thicken.
  2. Mix ingredients for yogurt milk mixture in a medium bowl. Set aside 
  3. Combine flour, baking powder, salt and sugar in a medium bowl. Pour in flax egg, yogurt milk mixture, melted butter and vanilla extract. Whisk until well combined. Should be thick but still smooth and slightly runny. 
  4. Heat up your waffle iron with butter. Pour in batter, wait until waffles are deep golden brown on both sides and edges are slightly crisp. 
  5. Top with heaping dollops of cocojune Strawberry Unsweetened yogurt, strawberry compote and dusting of matcha! Enjoy!
